Our producer Jairo Arcila is a third-generation coffee grower, local to the Quindio region. He and his family are continuing the coffee tradition, now with his two sons founding Cofinet, an co-operative representing Colombian coffee growers. The Arcila family have a keen interest in producers that use experimental processing methods. The anaerobic process is one of these, with cherries fermented for 40 hours, then transferred to raised beds for sun-drying. The varietal used here is Castillo, which is more productive and resilient than other native Colombian species.
We love this coffee cos: it’s a standout on the table with a cupping score of 87! Bottom line for you. It tastes really good. Caramelly apple goodness is what’s popping for us when we are sipping this baby.
