Mauricio Shattah is one of the world’s most innovative coffee producers. From acid fermented lots to anaerobic naturals, he takes coffee to its most extreme potential.
Although the gesha cultivar is one of the most celebrated in the world, what’s not widely understood is that it’s really many cultivars that all look very similar. As time passes, producers have identified the differences between them and have started selectively breeding, with the Bronze Tip being among the best. With a most complex, vibrant and interesting cup, the Bronze Tip retains the essence of the incredible gesha but takes it somewhere even more unique.
Mauricio’s processing, the way he takes the coffee from cherry to green coffee, is one of the most complex we’ve ever seen. The last time we visited his farm, we saw how he used a sterilised pre-processing procedure to remove all the bacteria from the coffee. He then re-introduced specific bacteria to ferment the coffee in order to highlight specific flavour notes. The coffee was then dried in temperature-controlled huts before final pulping.
Mauricio’s great care and ability is at the core of what makes his coffee so incredible, so rare, and so special.
