Thelma de Gutierrez comes from a long line of producers and has been growing coffee her whole life. In 2006 she decided to move to the small town of Ataco and that led her to purchasing the nearby farm La Providencia.

The honey process this lot underwent involves removing the skin of the coffee cherry but keeping the fruit on the bean. The coffee is then slowly dried in the sun on patios. By keeping the flesh on the seed the coffee tends to be sweeter and more fruit-driven than a usual washed coffee but not as wild as a natural.

The cultivars grown at La Providencia are quite unique for the region. Usually farms here grow mostly red Bourbon, but Thelma has planted many cultivars more usually seen in places like the Minas Gerais region of Brazil. What makes this interesting is that the cultivars don’t show many of the signature flavour attributes of that part of Brazil: dark chocolate and a nuttyness. Instead the coffee is rounded with a lively sweetness and berry-like complexity. It really shows how the approach to cultivation and the growing region can deeply affect the flavour of the coffee.
