This year for our Holiday Blend we wanted to spotlight the coffee origin we received the most compliments about, the one we found to consistently produce the most exciting coffees. This year the blend we want to drink with friends and family is 100% from Colombia. Our two mainstay lots, the Los Vascos and the Popayán Reserve, are balanced with a single origin from the producer people kept telling us they loved: Jairo Arcilla.
Together they create a coffee that is one part comforting classic and one part new and exciting.
Over the last ten years coffee in Colombia has undergone a complete change. Moving on from a cohesive flavour profile, smallholder producers have turned coffee on its head. Now lots from Colombia are among the world’s most diverse, largely due to advances in coffee processing and the embrace of these techniques by so many producers. From the refinement of traditional processes like the washed method, to new developments like anaerobic fermentation, Colombian coffee production has risen to a whole new level.
