A brilliantly processed coffee from our long-term partner, Fernando Lima. Combining clarity with a surprisingly delicate profile for a natural, this coffee is the result of a well-managed cold fermentation.
Story
This microlot, sourced from the Santa Elena Tablón #2 within the Santa Elena complex, has been processed using a meticulously managed cold fermentation method. The ripe cherries were sealed in Grainpro bags for 48 hours, allowing them to ferment with the leachate intact at a controlled temperature of 12 degrees Celsius. The resulting coffee is light and well-balanced with pronounced fruity notes.
Following fermentation, the coffee was dried in direct sunlight for eight days to initiate the drying process, and then to preserve the delicate flavour balance, the remaining drying was completed under shade over 16 days, allowing for a gradual stabilisation and well-rounded final cup.
