When we first cupped this coffee, we were impressed by it's balanced cup profile. While many anaerobically processed coffees from Colombia tend to be overly fermented, this one hit the sweet spot. We feel Bubble Gum represents what could be the future of coffee processing.
Bubble Gum was produced by Juan D Gallego from Buena Vista Farm in Risaralda, Colombia and is intended for filter.

This coffee was produced by Juan D Gallego from Don Gallego (also known as Agroindustrias Gallego SAS), a coffee producer established in Belén de Umbría, Risaralda.
They focus primarily on the production of Castillo Rosario, Supremo, Wush Wush and Geisha varietals.
ABOUT THE ANAEROBIC NATURAL PROCESS
The coffee cherry is anaerobically fermented in tanks for 120 hours with an ambient temperature of 19 degrees.
Every 24 hours, the coffee "juice" recirculates in the cherry enabling a consistent fermentation.
The coffee is dried in the sun until the moisture level reaches between 10 to 11.4%.
Finally, the coffee is stored in a special bag for stabilization and is kept stable for 1 month before it can be transported from the farm
