Pirates of Coffee - Jazzy Fruit, Colombia Anaerobic Natural
Jazzy Fruit is our first Loco Series release for 2024!
Sweet, full-bodied and fruit-forward, this coffee is produced by Juan D Gallego in Risaralda, Colombia. The anaerobic natural process results in a tropical and vibrant cup experience, with a bubblegum-like texture and a clean lingering finish.

We're excited to have out first addition to the 2024 Loco Series, which celebrates the crazy (in a good way) coffees coming out of Colombia. Our goal is to appreciate and display the efforts of innovation by Colombian coffee producers that are helping sharpen the edges of the coffee production industry worldwide.
ABOUT DON GALLEGO
This coffee was produced by Juan D Gallego from Don Gallego (also known as Agroindustrias Gallego SAS), a coffee producer established in Belén de Umbría, Risaralda in Colombia.
They focus primarily on the production of Castillo Rosario, Supremo, Wush Wush and Geisha varietals.
ABOUT THE ANAEROBIC NATURAL PROCESS
The coffee cherry is anaerobically fermented in tanks for 72 hours with an ambient temperature of 19 degrees celsius.
Every 24 hours, the natural coffee "juice" that emerges from the coffee cherry is recirculated back with the cherry, enabling a natural and consistent fermentation.
The coffee is dried in the sun until the moisture level reaches between 10 to 11.4%.
Finally, the coffee is stored in a special bag for stabilization and is kept stable for 1 month before it can be transported from the farm.
