FRANCISCO'S COFFEE REMINDS US OF THE GRAND PROFILES OF SOUTH AMERICAN TERROIR: BOLD, HONEYED SWEETNESS AND SPICE.
At 1912 MASL, Francisco's farm, Los Lucumos is 3 hectares and is covered with coffee, banana, and guava trees which also supply shade. Coffee cherry is picked, sorted for defects then wet fermented for up to 30 hours. Clean parchment coffee is set to dry on cement patios or rooftop for up to 20 days. Francisco has been producing coffee for only a short while, however he hopes to gain regional and international recognition in the near future.
