Diego Samuel is a world-class farmer, and one of the first in Colombia to begin experimenting with fermentation using microorganisms and yeast. Rather than adding flavor compounds to his coffee, he intentionally forms them during the fermentation processes by keeping track of the cherries' temperature, pH, and other variables.
