Finca Los Jazmines is located in Palestina, Huila, Colombia and run by Jose Lizardo Alba. The Farm sits at an elevation of approximately 1500 MASL and consists of 10 hectares in total. Of those 10 hectares, 7 are planted with coffee, consisting of approximately 27000 trees (a mix of pink bourbon, colombia, and gesha).
This lot is made up of 100% pink bourbon. The process starts with only the ripest cherries that are sent to the wet mill and floated to remove any over/under ripe units. The coffee is depulped and anaerobically sealed in bags for 76 hours. After washing, the coffee is dried out in a greenhouse for between 18-20 days.
