Fermentation: Two days of picking are combined and depulped, the coffee is left to ferment in open-air tanks for 36-45 hours without adding water. Then the coffee is washed for 2-3 times.
Drying: 8 days on beds under the dryer, in the shade. Then the coffee is moved into the parabolic dryer for 15-20+ days depending on the weather.
