Alfonso is a manager of Unión de Ejidos de San Fernando, a coffee farmers’ cooperative working in Chiapas state, who has brought together several producers from different backgrounds and focuses on building certified organic regional, community and single origin lots. Ángel Albino Corzo in Chiapas is particularly known for its diverse ecosystem which is suitable for specialty coffee growing conditions. Alfono's coffee is representative of the dedication, complexity and beauty that is found in the coffee and people of Ángel Albino Corzo.
The Story
Alfonso Gómez López grows coffee in Kotolte, a town in the prized coffee growing municipality of Tenejapa in Ángel Albino Corzo in Chiapas. Alfonso is a member of Unión de Ejidos de San Fernando, a coffee farmers’ cooperative working in the state that has brought together several producers from different backgrounds. The area is known for its diverse ecosystem which is suitable for specialty coffee growing conditions.
Unión de Ejidos de San Fernando is a cooperative that works alongside their producing members throughout the state to build organic certified regional and community offerings as well as single farm microlots from the top producers. Alfonso’s coffee, like many commonly found in Chiapas, is a mix of Bourbon, Typica, Caturra, and Costa Rica 95 varietals. This sector produces some of the state’s highest elevation coffee at 1,700 - 1,800 masl. The coffee follows a traditional washed process with 24 hours of fermentation and is sun dried between 6-10 days on patio.
