About the producer
Arnaldo (Arnardo) Guzman is a highly-experienced coffee producer. This is his thirtieth year producing coffee in the township of Quebradon in San Agustìn, Colombia. He primarily produces Pink Bourbon and Gesha trees and is in the process of renewing his Catimor plantation, working towards producing only specialty coffee.
Processing
Arnaldo holds daily pre-harvest meetings with his pickers to ensure everyone knows the level of maturity they are looking for in the cherries. This washed Pink Bourbon lot was first dry fermented with the whole cherry intact in plastic bags for 72 hours. The cherries were then de-pulped and further fermented in plastic bags for another 72 hours. The seeds are then rinsed and dried on parabolic-style greenhouse solar dryers for a period of 10 to 30 days.
Varietal
Pink Bourbon is a variety primarily grown in Huila, Colombia. Though newer than other varietals, it has quickly grown in popularity for its bright, sweet and aromatic profiles. It is now known to be an Ethiopian Landrace.
