As much as theres a lot involved in making great coffee, you cant understate the value of care and nurture. The Ajere mill in Yirgacheffe, Ethiopia is is a prime example of the difference caring for your coffee can make. As the coffee they gather from around 650 family farmers sun-dries for 12-15 days, it is covered from 12 to 3pm daily in order to protect from the hot mid-day sun, then covered again when the night falls to protect the drying coffee from rainfall and moisture. This makes for a sweet and fragrant cup - the perfect result of Tender Loving Care
