In Costa Rica’s Central Valley, Hacienda Sonora sits at the foot of the celebrated (and active) Poás Volcano. On this 100-hectare farm, 65 hectares are dedicated to shade coffee, 10 hectares to sugarcane and 25 hectares are wild forest reserve.
The farm is owned and operated by the father and son duo of Alberto and Diego Guardia. Diego returned home after six years studying engineering abroad in America. This education has helped him implement innovative systems and ideas, complementing the immaculate skills of his father Alberto. From a high-tech micro-mill and dry mill to meticulous sorting of lots, strict resting and homogenisation of the stored beans, along with skilled specialisation in honey and natural processes, have all led to the stunning reputation Sonara Estate holds.
The most stable taste quality of Catuaí is its sweetness, which is mainly dependent on adequate fertilisation. Natural compost also intensifies the sweetness of the coffee and improves its overall taste.
