This coffee was sourced by one of our local importing partners, Mercanta Coffee Hunters.
Rio Azul Co-operative was founded in 1967 & has an exceptionally long history of producing high quality coffee. Its 288 members live within 1.5 hours of the wet mill & each member has their own farm averaging 1 hectare in size and they grow other produce as a cash crop like bananas, avocados and oranges.
During the harvest months from December to April, the coffee cherries are picked in several passes to ensure the right level of ripeness. The cherries are transported to the central wet mill each afternoon, where it is depulped and left to ferment for an average of 36 hours. Once complete, the coffees are washed and laid to dry on patios for 10-12 days to achieve optimal humidity.
We’re absolutely enjoying this classic Guatemalan flavour profile, with ripe notes of oranges & cherries. The acidity is smooth, followed by a round weighty body & ending with notes of milk chocolate.
